• Long-term preservation in a dry state

• How to prepare nikawa?

• Step 1 – Soaking

• Break the nikawa into small pieces.

• Soak it in cold water for 3 to 12 hours .

• Step 2 – Heating

• Heat in a bain-marie , never directly on the stove.

• Ideal temperature: 60–70 °C max .

• Never boil (it destroys the stickiness).

• Step 3 – Usage

• Use hot .

• Upon cooling, it reverts to a gelatinous state.
