How to prepare nikawa?

Step 1 – Soaking

Break the nikawa into small pieces.

Soak it in cold water for 3 to 12 hours .

Step 2 – Heating

Heat in a bain-marie , never directly on the stove.

Ideal temperature: 60–70 °C max .

Never boil (it destroys the stickiness).

Step 3 – Usage

Use hot .

Upon cooling, it reverts to a gelatinous state.
